Some snacks live a double life as recipe ingredients.
Nilla wafers are included in this section because they are a fundamental ingredient in my family’s bourbon ball recipe.
There is already a very informative site about these vanilla butter cookies, albeit when it says, “Nilla Wafers are made with a blend of flour, sugar, shortening, eggs, and natural and artificial vanilla flavoring,” they are leaving out little details like the high fructose corn syrup, palm oil, and so on (plus that the corn and soy are bioengineered, which matters to some folks); that is to say, the site is intended to be light and entertaining (much like the cookie itself), and not a rigorous source of scientific information. There is even a video detailing a homemade version (which has an annoyingly repetitive musical background loop).
Nilla wafers are also familiar in the creation of the likes of pie crusts and banana pudding, both of which I have made in years past (along with the ). The pudding recipe is on the side of the box (above), and can also be found at the Snackworks site (which is an official Mondelēz platform).
The is a landscape version of the front, which you don’t see very often.
They turned out to be a fun exploration, but were not substantially better than the boxed kind, particularly for making the bourbon balls.
